Sev is a noodle type crispy snack made from gram flour. It is particularly used in many Indian food and snack preparations as main ingredient or garnishing agent. It can be prepared at home very easily. This recipe uses Sevai Machine to prepare it at home.

Sev (Gram flour noodles) is one of the most well liked of recent trending foods on earth. It is enjoyed by millions every day. It’s easy, it’s quick, it tastes delicious. They are nice and they look fantastic. Sev (Gram flour noodles) is something which I have loved my whole life.

The ingredients needed to make Sev (Gram flour noodles):
  1. Prepare gram flour (besan)
  2. Take turmeric powder
  3. Make ready red chilli powder
  4. Take garlic paste (optional)
  5. Prepare oil
  6. Take Oil for deep frying
  7. Prepare salt
  8. Make ready water

Sev is a popular Indian snack food consisting of small pieces of crunchy noodles made from chickpea flour paste, which are seasoned with turmeric, cayenne, and ajwain before being deep-fried in oil. The sev are basically fried noodles made from gram flour. Sev (noodles) are shaped with Seviya machine, a unique brass utensil equipped with different interchangeable disks.

Instructions to make Sev (Gram flour noodles):
  1. Take a broad vessel and grease the bottom with oil
  2. Add all dry ingredients and mix it well
  3. Add 1 tbsp oil and mix it well
  4. Add garlic paste, its optional in case you want it to be ginger flavored you can add ginger paste at this point
  5. Knead medium soft dough
  6. Once the dough is almost ready and if it is sticking to your hands remove it using a spoon then grease your palms with oil and then knead it a bit and keep it aside
  7. Use the machine shown in Image1 and Image2, It is Sev (noodle) maker machine.
  8. Divide dough in to two equal portions
  9. Grease the machine with oil from inside then put first portion in it and close it
  10. Heat the oil for frying on medium heat
  11. Once oil is ready, hold the machine vertically on top of the pan with one hand and with the other hand turn top handle of the machine, this will help to push the noodles out from the bottom directly in to the oil
  12. While turning the top handle, try and make circle of noodles matching the diameter of the pan
  13. Fry it for about 20 seconds and flip it over
  14. Fry it until light golden color as shown in Image 3; it will take 20-25 seconds

The sev are basically fried noodles made from gram flour. Sev (noodles) are shaped with Seviya machine, a unique brass utensil equipped with different interchangeable disks. A fine-holed disk is attached to the container and filled with dough. Sev is a delicious fried vermicelli snack that is made from besan/ gram flour. The sev is used in most chaats like Bhel Puri, Sev Papdi Puri Chaat, Khakra Chaat, Chole Tikki Chaat and many other dishes.
