Prepare 3 g White pepper whole *
Make ready 1/2 tsp Black pepper whole
Make ready 1/2 cup Yoghurt *
Take 2.4 tsp Ginger
Prepare 2.4 tsp Garlic
Make ready 4 tsp birista
Prepare 1.6 tsp Biryani masala
Get 1/2 tsp Kewra water
Get 1/2 tsp Red chilli powder *
Make ready 2 tsp Salt
Take 1/2 tsp Ground pepper *
Make ready 2/3 cup Water
Make ready 6 pcs Green cardamom *
Get 2 pcs Black cardamom
Get 7 Cloves *
Make ready 6 cm stick Cinnamon *
Get 7 g Fennel seeds *
Take 3 g Bay leaves *
Take 3 kg Water *
Make ready 45 g Salt
Make ready 1 small Alum(Fitkari)
Get 10 pcs Bay leaves (to line the pan with) *
Get 5-6 pieces Alubukhara (dried plums) *
Take 1 tsp Rose petals (optional)
Get 2 tbsp Birista *
Get 1 tsp Biryani masala
Take 2 tbsp Grated khoya kheer
Get 1/4 cup Yakhni
Prepare 1 tsp Lime juice *
Make ready 1 pinch Saffron (steeped in 2 tsp warm milk) *
Take 1 pinch Yellow food colour *
Get 2 tbsp Milk *
Make ready 1 tsp Kewra water *
Make ready 2 tsp Rose water *
Make ready 4 drops Meetha attar *
Get 3 tsp Ghee *
Take 2 tsp Butter
Instructions to make Chicken dum biryani:
Cut and washed the potatoes then apply some yellow food colour fry it in oil,once done keep it aside
Cut the onions finely then add little corn flour sieve the excess then deep fry until golden brown
In a mixing bowl add yogurt, birista, all the dry spices, and essence mix it then add the chicken pieces
Marinate the chicken for 3 hours then heat a oil add the marinated chicken after few minutes add the fried potatoes,once cooked keep the potatoes, chicken and gravy or Yakhni separated
In a big pan grease it with ghee then spread bay leaf, parallel cook the rice
The chicken pieces, then potatoes after that add the yakni or gravy over it
Now spread the cooked rice, then layer it with some birista, biryani masala
Again layer it with rice, pour the saffron milk mixture, ghee, birista cover it with aluminium foil then cover it with lid, place the Kadhai over tawa on very low heat for 30 minutes, after this turn off the heat let the biryani set for 20 minutes then serve..
