  3. In separate bowl, whisk the eggs and cream and add the salt and pepper
  4. Remove the crust from the oven and add the chorizo mixture top with mozzarella and the egg mixture.
  5. Place in the oven and bake at 180F for 35 min. The center should come out clean.

Add the chorizo and cook until golden brown. Remove with a slotted spoon to a plate lined with paper towels. Scatter the fontina, Cotija, green onions, chorizo and thyme over the warm tart shell. Whisk the eggs in a large bowl. Mushroom quiche with all-butter pie crust filled and baked with mixture of egg, cream, milk, sauteed mushrooms and shallots.
