Remove beef from the pot, shred it and then toss it with the lime juice and some salt and black pepper. Those flautas were long, thick and cooked in a mix of vegetable oil and Let it cool and shred. Peel and cut the potatoes in large cubes, cook in salted water until tender, do not over cook. Flautas are rolled tacos that are fried until golden and crispy.

  3. Bring to a boil, reduce heat to a simmer and cook for 2 hours or until meat is tender.
  4. Remove beef from pot, shred and toss with lime juice, salt and pepper.
  5. Warm tortillas in a paper towel in microwave for about one minute or until soft.
  6. Place 2 tablespoons of meat and 1 tablespoon of cheese on a tortilla and roll it up. And repeat until tortillas and meat are finished.
  7. Heat 1 cup of Canola oil in a large skillet till hot but not smoking. About 350°.
  8. Gently place Flautas in the oil seam side down. Cook on each side until golden brown if using flour tortillas or until crispy if using corn tortillas. About 1 min on each side.
  9. Serve immediately with Toppings. (Shredded lettuce, diced tomatoes, sour cream) and enjoy. (Works well with refried beans and rice on the side)
