  4. Roast for 30 minutes, then turn over potatoes and roast until all liquid is absorbed and potatoes are golden brown. You should see small amounts of olive oil on potatoes.

Add the oil, lemon juice, oregano and salt and toss well to coat. Mixture should form a slight paste on the outside of the potatoes. Transfer to a greased rimmed baking sheet. Immediately toss with the lemon zest and oregano, and serve. Zest & squeeze juice of a lemon over potatoes, sprinkle with oregano (rolling oregano between palms of hands to release natural oils) and lemon pepper and mix.
