Serve as an appetizer or side dish with salsa or serve as main course topping with lettuce, tomato, olives, sour cream, etc. I have also added chopped onion to the chicken mix. In a large bowl, combine chicken, cream cheese, chipotle and sauce, cumin, and chili powder.

Lay two taquitos side by side with the sealed edges facing inwards. Insert a bamboo skewer through the center of two taquitos. Remove from the fryer and allow to drain on paper towels. In a medium bowl, combine the chicken and salsa, and mix thoroughly.

Instructions to make Chicken Taquitos:
  1. Put canned chicken in a pan, when heated add water and taco seasoning (usually about a half of a packet will cover it, but season to your own desires)
  2. Once water has boiled out, add cream cheese and mix on heat until melted.
  3. Put chicken mix, shredded cheese, diced peppers and onions on tortilla and roll up and place in pan. Sprinkle with sea salt.
  4. Bake on 375 for 12-15 minutes or until torillas are golden brown on the edges.
  5. Serve with a rice side. I like rice pilaf.

Remove from the fryer and allow to drain on paper towels. In a medium bowl, combine the chicken and salsa, and mix thoroughly. Remove chicken mixture from the refrigerator, and drain any excess liquid. Like quesadillas, taquitos are a great way to use leftovers such as chicken or veggies. But unlike quesadillas, which require attention on the stovetop, taquitos are pretty hands-off once you get them made and in the oven.
