  1. Prepare a pot of water that covers all the beef. Add 5 slices of ginger. Start boiling with high heat and turn to medium heat when the blood foam comes out. Boil without the pot lid.

  7. Add light soy sauce to give it a sweet hint. Add dark soy sauce to give it a caramelized color.
  8. Add water to cover all the beef. Boil at medium heat with lid on for 40 minutes to 1 hour.
  9. Cut the baby potatoes to half size. After 40 minutes to 1 hour, the water in the pot should be shallow. Add water to cover the beef again.
  10. Boil for another 40 minutes, the water in the pot should be shallow again. Add potatoes and cook for 20 minutes or till the potato is tender. It's ready to serve.

Spoon off excess fat and serve hot. In a large pot or Dutch oven, heat the oil and brown the ribs well on all sides. Place the roasted ribs on top of the vegetables in the Dutch oven and add the brown sugar and beef stock. Bring to a simmer over high heat. In a large mixing bowl, pat short ribs dry with a paper towel.
