  1. Dice tomatoes and put on a bowl. Chop basil in bits. Add to the bowl.
  2. Finely cut garlic and then add to the bowl. Add the onion as well.
  3. Add the oil and seasonings. Mix well and then set aside.
  4. Cut the baguette into almost 1in sideways so that you can put more of the mixture.
  5. Toast the sliced bread until golden brown and then spoon the mixture on top. You can sprinkle cheese if you want because I want mine with cheese.
  6. Eat it while it's hot! Some like it cold. If so, refrigirate for a few hours. Enjoy!

You can toast the bread in the oven or on the grill so you don't heat up the kitchen. In a large bowl, combine oil, basil, garlic, salt and pepper. Bring to room temperature before serving. Rubbing the garlic directly on the bread may make it strong – but it IS the authentic method – it's how they did it while I was in Italy. One good suggestion is to drizzle olive oil over the top of the tomatoes.
