  2. Take Chicken (boneless)
  3. Make ready 2 tsp curd
  4. Take Pinch salt
  5. Prepare 1/4 tsp red chilli powder
  6. Make ready 1/8 tsp turmeric
  7. Make ready 1/4 tsp garam masala
  8. Take 1/4 tsp kasuri methi
  9. Get 1/2 tsp ginger-garlic paste
  10. Get 1 tsp oil
  11. Prepare For the gravy
  12. Make ready 1 tsp oil
  13. Prepare 1 tbsp cashew nuts
  14. Prepare 1/2 medium onion, roughly chopped
  15. Prepare 1 medium tomato, roughly chopped
  16. Get 1/2 tsp ginger-garlic paste
  17. Prepare For finishing the sabzi
  18. Prepare 1/2 tbsp butter
  19. Prepare 1/4 tsp cumin seeds
  20. Get 1-2 cloves
  21. Prepare 1-2 cardamom
  22. Take 1/4 " cinnamon
  23. Make ready 1 green chilli slits
  24. Prepare 1/4 tsp red chilli powder
  25. Make ready 1/2 tsp cumin-coriander powder
  26. Take 1/2 tbsp sugar/tomato ketchup
  27. Get 1/2 tsp salt (to taste)
  28. Prepare 1/4 tsp garam masala
  29. Take 1/4 tsp kasuri methi
  30. Take 1 tbsp cream (or butter and milk)

Created by Kundan Lal Gujral, you may notice that Butter Chicken (known as murgh makhani — chicken with butter), is similar to British tikka masala. Prepared in a buttery gravy with the addition of cream gives the curry sauce a silky smooth rich texture. Butter chicken is made with spices, tomato, butter, and cream. It's rich and warming, but the spice blend is really what makes this dish.

Instructions to make Butter Chicken:
  1. Mix all the ingredients (except chicken) for the marinade in a bowl. Taste it, adjust flavour if needed.
  2. Add chicken and coat it in the marinade fully. Let it rest for few hours (1-2 hours at least).
  3. Grill the chicken on stove top with butter.
  4. For the gravy, add oil to a pan.
  5. Add cashew nuts and roast till they are light brown.
  6. Add onions and cook till translucent.
  7. Add the ginger-garlic paste and cook till the raw smell fades.
  8. Add the tomatoes and cook till oil separates/gets mushy.
  9. Let it cool down and then blend to a paste.
  10. To finish the sabzi, add butter to a pan.
  11. Add the whole spices (cumin, cinnamon, cardamom, clove) and cook till it sizzles.
  12. Add onions, ginger-garlic paste and green chilli slits and cook.
  13. Add tomato ketchup/sugar and all the dry spices except garam masala and kasuri methi.
  14. Mix well and let it cool for 2-3 min.
  15. Add cream (or butter and milk) and mix well.
  16. Add kasuri methi and garam masala.
  17. Add the chicken pieces and cook for a minute.
  18. Serve hot with rice/paratha/naan!

Butter chicken is made with spices, tomato, butter, and cream. It's rich and warming, but the spice blend is really what makes this dish.
