  7. Add potatoes and clam juice simmer until potatoes are tender
  8. Add clams and cream
  9. Simmer until hot
  10. Add salt and pepper

Stir in clams; and season to taste with salt and pepper. Drain off all bacon fat but enough to coat the bottom of the pan. Add the clam juice, salt and pepper, thyme and chopped parsley. New England Clam Chowder is white (thanks to the addition of milk or cream), and has a thick, creamy texture. It traditionally includes potatoes, onions and salt pork or bacon.
