  1. Boil lasagna noodles till almost done, drain and rinse under cold water
  2. Mix together ricotta, eggs, parmigiana, parsley, and nutmeg in a large bowl, season with salt and pepper
  3. Cover bottom of a 9x13x3 pan with a little sauce, put first layer of noodles over sauce Lasagna1. Layer half ricotta over noodles, then half the grated mozzarella, and sprinkle about 1/3 of Romano and drizzle a little sauce over top.
  4. Layer noodles again and repeat for second layer finishing with a layer of noodles and topping with sauce then sprinkling with a little Romano cheese
  5. Bake covered at 350deg for 45min to an hour, then uncovered for about 15min more

Cook the noodles "al dente" so they'll still have quite a bite to them. When they're finished cooking, drain, rinse with cool water, and lay the noodles flat on a sheet of aluminum foil. This lasagna dish will become a regular in our household. In this dish I used a spicy moose sausage; you can use pork, deer, moose, lamb, or any other spicy sausage.
